Green Ginger

  • Color: Should have a light green to pale yellow color.
  • Skin: Thin, delicate, and easily peeled or even eaten.
  • Rhizomes: Should be firm, plump, and smooth, with multiple "fingers" or branches.
  • Aroma: Fresh, mildly spicy, and citrusy. Less pungent than mature ginger.  
  • Flavor: Mildly spicy, sweet, and slightly tangy.
  • Texture: Tender, juicy, and less fibrous than mature ginger.  
  • Freedom from Defects: Should be free from blemishes, bruises, decay, mold, and insect damage.
